As a former craft brewery owner, I am interested in the social and competitive landscape of the U.S. brewing industry in the second half of the 19th century. How was competition shaped by urbanization, German immigration, new technologies, capital formation, the temperance movement, and not least, efforts to tame a highly variable biological fermentation process into a mass production mode? How did changing economic arrangements affect the roles of owners, managers, brewmasters, workers, and union leaders, and how did these groups strive to either encourage or forestall these changes?
